Located in Northern Vermont, Sarkis's Mediterranean Restaurant offers a fine dining experience with its superb menu of authentic Lebanese and Mediterranean cuisine.
Paul Sarkis, a native of Beruit, purchased Warner's Gallery Restaurant (now Sarkis's Mediterranean Restaurant) in 2010. It has become his mission to bring his healthy Lebanese fare to Vermont. "There is no salt in any of my food", says Sarkis. "My Grandmother always told me the good chef never uses salt to make the food taste good. You have to play with the flavor to make it delicious." Unique to Sarkis's Mediterranean Restaurant is a fourteen course mezza dinner. The mezza begins with a combination plate of hummus, tabbouleh, dolma and baba-ghanouj. The hummus is made with high quality Lebanese tahini, along with his many other imported ingredients. The pita bread is purchased from Andalos Bakery in Ville Saint-Laurent.
The grape leaves are stuffed with an exotic mixture of rice and seasonings. The tabbouleh is made with bulger and finely chopped local parsley, tomatoes and onions. Fattouche is a salad dish made with sumac, bits of pita, lettuce, tomato, onions and cucumber. Fassoulia, a salad made of tender lima beans, is made with imported olive oil and garlic. Another rich, authentic accoutrement is Sarkis's za'atar, a mix of sumac, garlic, sesame seeds and fresh green herbs in imported Lebanese olive oil that is clearly of an old world culture. Kibbeh Nayyeh, a mixture of finely chopped Vermont tenderloin beef, is lightly seasoned with cumin and other spices and mixed with onions and bulgur, then topped with olive oil and parsley. Kibbeh Aras, a variation of Kibbeh Nayyeh, is shaped into medium sized droplets for easy finger dipping. The Kibbeh Aras accompanies similarly shaped Falafel. For dipping, a garlic mixture called toum adds texture.
The main entrees of the Mezza include Shish Tawouk and Kafta. Shish Tawouk is marinated chicken breast, soaked in garlic, lemon juice, olive oil and pepper for three days and flame broiled to perfection. It is exceptionally tender and low in fat. Kafta is a length of chopped filet mignon layered with Vermont farm fresh tomatoes and potato slices (when in season), for a tender and wholesome main course.
